Monika's Homemade Curry

 
 

Ingredients

  • 4 tablespoons olive oil or coconut oil
  • 2 chopped onion
  • 4 cloves garlic (cut in half)
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric
  • 1/2 teaspoon curry powder
  • 1 tablespoon chopped fresh ginger
  • 1 chilli no seeds
  • juice from half lemon
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tin coconut milk
  • 2 chopped tomatoes
  • 1/4 chopped pineapple
  • fresh coriander to garnis 

Method

  1. Heat oil in the pot, add onions and garlic, cook for 2 minutes on the medium heat
  2. Add all the dry spices, cook for 2 minutes
  3. Add ginger and chilli, stir well
  4. Add tomatoes, pineapple, fish sauce, soy sauce and coconut milk, cover and cook on the medium heat for 10 - 15 minutes
  5. Add lemon juice and blend the sauce
  6. Serve with stir-fry vegetables of your choice (very nice with cauliflower and chickpeas) or meat and Brown basmati rice.
