Monika's Homemade Curry
Ingredients
- 4 tablespoons olive oil or coconut oil
- 2 chopped onion
- 4 cloves garlic (cut in half)
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon garam masala
- 1 teaspoon turmeric
- 1/2 teaspoon curry powder
- 1 tablespoon chopped fresh ginger
- 1 chilli no seeds
- juice from half lemon
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tin coconut milk
- 2 chopped tomatoes
- 1/4 chopped pineapple
- fresh coriander to garnis
Method
- Heat oil in the pot, add onions and garlic, cook for 2 minutes on the medium heat
- Add all the dry spices, cook for 2 minutes
- Add ginger and chilli, stir well
- Add tomatoes, pineapple, fish sauce, soy sauce and coconut milk, cover and cook on the medium heat for 10 - 15 minutes
- Add lemon juice and blend the sauce
- Serve with stir-fry vegetables of your choice (very nice with cauliflower and chickpeas) or meat and Brown basmati rice.
