Make no mistake these are pan-cakes! Thick yet light and fluffy with a melt in your mouth texture that will have you hooked after one bite. These are not those skinny little crepes that are so thin you can almost see through, no, no, no these are the real deal. So what are you waiting for, go grab the frying pan!
Ingredients
· 125g plain flour
· 1 tsp. baking soda
· 1/2 tsp. baking powder
· 1 tbsp. butter (melted)
· 1 large egg, lightly beaten
· 1 1/2 tsp. vanilla extract
· 120ml buttermilk
· 1 tsp. pure maple syrup/honey
· 60g plain 0% Fat Greek yogurt
Directions
1. In a mixing bowl whisk together the flour, baking soda and baking powder.
2. In a separate bowl, whisk together the butter, egg, and vanilla.
3. Then whisk in the buttermilk and maple syrup with the egg mixture.
4. Then stir in the yogurt until the mixture is smooth.
5. Add in the flour mixture and stir to combine.
6. On medium heat add a knob of butter to the frying pan.
7. Dollop 2 tablespoons of batter onto the frying pan.
8. Let the pancakes cook for 2-3 minutes, or until the edges brown a little.
9. Then slide a spatula underneath, and flip. Continue to cook for another 1-2 minutes or until light golden brown on both sides. Serve hot.
