Almond and Pear Cake
This weekend you must try cake so difficult to mess up that you are guaranteed a delicious, light and moist dessert. Flourless, free from refined sugar, quick and easy recipe for everyone. Hope you will enjoy it!
- 115g butter (room temperature)
- 100g honey
- 2 eggs
- 300g ground almonds
- 50ml almond milk
- 1 1/2 teaspoon aluminium free baking soda
- 30g flaked almonds
- 3 or 4 medium size pears (peeled)
Start with beating the butter and honey with a whisk (or wooden spoon) until smooth. Add the eggs one at the time, mixing well after each one. Add the ground almonds mixed with baking soda, then milk and combine all. Pour the cake mixture into the prepared tin and level the surface. Core the pears and slice lengthways into thick slices then, arrange them on top of the cake, sprinkle with the flaked almonds and bake in pre-heated 180 C oven for 45 minutes - until the top of cake is golden. Allow to cool on the rack; this cake is lovely served both warm and cold.
