French Toast
As breakfasts go, you really can’t beat French Toast. It really only takes a few minutes to make and with the eggs and the bread, it will keep you full until lunchtime. As a Nutritionist, we are always saying, eat protein with every meal as it helps slow down the release of carbohydrates and helps keep you feeling fuller for longer. Which in turn results in less snacking in between meals.
You can serve them just on their own or you can add berries (I heated up some frozen berries and let them cool). I also love them with Greek yogurt and a little honey on top. To serve I usually pile them high and cut like a cake. You can use gluten free or sourdough dough bread if you have a gluten intolerance. Here’s the recipe, Enjoy!
Ingredients (Feeds 2)
· 2 large eggs
· 1 tsp. vanilla extract
· ½ tsp. cinnamon
· tbsp. honey
· 4 slices of your favourite bread
(I used Vienna bread)
· 1 Tbsp. butter
Directions
1. In a wide bowl, whisk eggs, cinnamon, honey and vanilla until combined.
2. Dip both sides of the bread into the egg mixture. Coat both sides well.
3. In a large frying pan on medium heat, melt the butter.
4. Once melted and hot, add bread slices. Fry until golden brown, about 2-3 minutes. Flip and fry for 1-2 minutes on the other side.
5. Serve with Greek yogurt, honey and berries.
