Popcorn Chicken Goujons
These are an all time family favourite in our house. With the unmistakable smell of popcorn wafting through the house, there will be no need to call them to the dinner table. I keep my Popcorn Chicken Goujons pretty plain but feel free to spice them up or add your favourite herbs to the breadcrumb/popcorn mix. Homemade chicken goujons are always healthier than shop bought and these can be made in advance and stored in zip lock bags in the freezer.
Ingredients (Feeds four)
30g bag of popcorn (popping your own is fun too)
Divide 3 breasts of chicken into goujon sized pieces.
100g bread crumbs
Egg wash - 1 egg beaten with about 20mls water
1 tsp paprika (or spice/herb of your liking)
1 tsp garlic granules
50g plain flour (or GF flour)
Directions
Pre-heat the oven to 180C
Blend the popcorn in a blender for 30 secs.
In a regular soup bowl add the breadcrumbs, paprika, garlic granules and blended popcorn and mix with a fork until combined.
To breadcrumb the chicken, put the flour in one bowl, put the egg wash into another bowl and the breadcrumb mix into a third bowl.
Start by coating a goujon in the flour, shake off any extra flour.
Then dip the goujon in the egg wash, allowing any excess egg to drip off before coating the goujon in the breadcrumb mixture.
Set that goujon on a baking tray and repeat with the rest of the goujons.
Place the baking tray in the oven at 180C for 30-35mins (or until nicely browned)
