Coconut Roasted Sweet Potato with Spicy Avocado and Tomato Salsa
This is one for the grown-ups. It is packed full of flavour, fibre and vitamins, especially Vitamin A which is good for vision, skin and bones. Visually this looks amazing so if you want to impress someone, treat someone or just cheer someone up, this is a lovely idea.
Ingredients
One medium Sweet Potato (peel and slice into disc shapes)
Tbsp. coconut oil
1 ripe avocado
1 tomato
Juice of ½ lime
Sprinkling of chilli flakes or fresh chilli (optional)
Directions
Pre-heat oven to 180C.
Massage coconut oil onto the sweet potatoes.
Place sweet potatoes on a baking tray and bake for 25-30 mins.
In the meantime, dice avocado and tomato and mix gently in a bowl
Add the lime juice and chilli.
Remove sweet potatoes from oven and spoon avocado mix on top.
Best enjoyed warm.
