Granola
The best thing about Granola is that it can be made in advance, as a big batch and you can add whichever seeds and nuts you prefer. Easy, delicious and healthy, with so many ways to eat it - Granola is definitely one of my favourite breakfasts. And this is the way I will do it:
Preheat oven to 180 C.
In a large pot, over a small heat melt 4 tablespoons of coconut oil, 4 tablespoons of honey and 2 tablespoons of peanut butter.
Take of the cooker add 4 cups of oats and pinch of Himalayan salt - mix well.
Pure oat mixture in to a try with greaseproof paper, add seeds and chopped nuts of your choice (I love pumpkin seeds, sunflower seed, chia seeds, flax seeds, hazelnuts, almonds, walnut or whatever I can find at home :-) ).
Bake for 30 min stirring occasionally.
Remove from the oven and let cool for 15min. Store your Granola in the container with a sealed lid.
Tip: you can add cinnamon, vanilla extract, orange zest or dry fruit (just avoid one with sugar and preservative like sulfur dioxide) for extra flavour.
